Kale Yeah!

Kale Yeah!

Everything in this dish is good for you: sweet potatoes, chicken, onions, and…kale! This is an easy dinner and tastes delicious. My favorite part on this plate is the kale; I could eat tons of it.

Kale also can be made into “chips,” which is another favorite of mine. It’s easy, crunchy, and healthy! Have an awesome Tuesday!

  1. I heard about Kale for the 1st time when I watched Rachel Ray Show. I am very curious but I have not encountered the vegetable in our local market so far. I think I am going to check the bigger supermarket. ๐Ÿ˜€

      • I actually have found a store that sells Ritter Sport in my hometown! ๐Ÿ˜€ Yay!
        But finding Kale might be a problem because the Indonesian government is, at the moment, limiting the import of fruits and vegetables to promote local products. But I will try to look for it anyway, because I am super curios! Wish me luck, Lisa! ๐Ÿ˜€

    • Hereโ€™s what you need:
      A package of chicken legs
      One bunch of Kale
      One onion
      Two medium- large sweet potatoes
      Seasoning such as Emerilโ€™s Original Essence (love the stuff)

      Heat oven to 350 degrees
      Wash and cut the stems out of the kale โ€“ place into casserole dish
      Peel and slice the onion โ€“ put on top of the kale
      Peel and wash sweet potatoes- cut into chunks and put over kale and onions
      Put chicken legs on top
      Sprinkle Emerilโ€™s on top of the chicken legs

      Cover the dish with tin foil and place into oven for twenty minutes
      Take the tin foil off and place the dish back into the oven for thirty more minutes

      This is dish is super flexible โ€“ meaning that you can add more sweet potatoes or less kale. Sometimes, I add more kale because it cooks down. Itโ€™s totally up to you! Let me know if you any questions! โ˜บ

      • You’re welcome! The chicken and onion flavor the kale and sweet potatoes, but when you add the seasoning or just salt and pepper, it makes if super delish!

        I know the feeling with “those” recipes… ha! ๐Ÿ™‚
