A couple of weeks ago, I made my first pot roast. In a Crock Pot and it was awesome. My friend, Michele gave me the low down on a quick recipe: rump roast, potatoes, carrots, onions, one packet of french onion soup mix, and beef broth –just enough to cover the roast. In my version, I added celery, and used a vegetable stock instead. I had to make it quickly, and it only took me 15 minutes –it was mostly chopping– to throw everything in the Crock Pot. It cooked for about seven hours for a 3.5 lbs roast and was awesome. Such an easy meal that brings so much comfort. 🙂 Maybe the winter season isn’t all that bad. Just kidding!
Inviting me for dinner, I knew my friend Amea would make something delicious. She made a chicken white chili, cornbread, and I brought over some veggies and dill dip. The chili was amazing: perfectly seasoned, warm, and hearty. An added bonus was the cornbread, and between Amea, Soloman, and me, it got demolished. It was great to eat, catch up, and laugh. Good times!
During the football season, I was invited to one of the Kansas City Chief’s game. The game fell on one of the coldest days –the start of winter. Despite the fun the atmosphere, and the sun shining, it was difficult, at times to stay warm during the tailgate. We had chorizo breakfast burritos, pan fried potatoes, fruit, chips, cookies, etc. It was so good, but then another fellow tailgater asked if we wanted some homemade jumbalaya. Of course, we jumped at the opportunity.
I’m starting to miss the foods that are associated with summer. The BBQ’s, fresh fruits, veggies, etc. One that stands out is this salsa that a friend made. I pretty much ate the whole thing and it was awesome. I know we can eat these things during winter, but sometimes it’s so much better when the weather is a little warmer outside.
My love for ramen will always be strong. It’s so good and any kind will do. From spicy to loaded with veggies and beef, bring it on! There is a ramen place near my work that I will have to try some time! Also, since Fall has arrived, it’s officially ramen season. Yay!
I don’t know what it is, but coffee makes me happy. The combination of coffee (in any form), cream, and sugar … oh man! I love the bitterness, creamy, and slight sweet taste in one drink. Casually drinking coffee during my undergrad while studying, it wasn’t until I started my first job when my love for coffee became real 🙂 When I was little, I used to think that if I ever started to drink coffee in the morning, I was officially old. Well, I guess I became old in 2012. 🙂
