Capers are legit.

While working at a sandwich shop for most of my undergrad years, I was introduced to capers. One of my co-workers dared me to try one and so I did. I didn’t like it. It wasn’t horrible, but it also wasn’t a cheesesteak or burrito. It wouldn’t be until years later when I would face capers again – thanks to my brother. I am now a big fan of capers and enjoy what they bring to any dish.

In this lemon caper chicken dish, the capers definitely play the role of salty goodness. The acid from the lemon and the simple, pan fried chicken play well together with their friend, capers. Awesome dish. Don’t forget the baked sweet potatoes as well.

Brisket, whoa!

My brother makes the best brisket. It’s tender and has the right amount of seasoning. A little bit of horseradish mayo and shredded cabbage completed this sandwich, along with a side of sweet potatoes. I could eat brisket for days. What a luscious delicious score!

Everything in this dish is good for you: sweet potatoes, chicken, onions, and…kale! This is an easy dinner and tastes delicious. My favorite part on this plate is the kale; I could eat tons of it.

Kale also can be made into “chips,” which is another favorite of mine. It’s easy, crunchy, and healthy! Have an awesome Tuesday!

Braised Short Ribs.

These braised short ribs cooked all afternoon and melted like butter at first bite. The meat was super tender, the sauce was delightful, and the veggies brought the dish together. Two-thumbs up for another one of my brother’s awesome meals.

Meat loaf, two over-easy eggs, and baked sweet potatoes. Such wonderful flavors on one plate. You have a salty protein, with sweetness from the potatoes, and the creaminess of the egg made the meal complete. Thank you, brother!
